Food Allergy Concerns? Try These Allergen-Free Recipe Ideas for a Safe and Healthy Valentine’s Day

Chocolate, butter, nuts….put these together and you’re on your way to a delicious dessert concoction. But for the millions of Americans suffering from food allergies and sensitivities, indulging in traditional Valentine’s Day treats can result in unpleasant or even life threatening consequences.

When cooking for people with food allergies, it’s extremely important to check the labels on all ingredients and foods that will included in your recipes. Food additives you may not expect to find – such as wheat or gluten in sauces, and nut oils processed foods, etc – can sabotage your good intentions and sicken allergy sufferers. The following recipes offer some delicious allergen free dessert options featuring SoL that are perfect for Valentine’s Day:

Strawberry and SoL™ Sorbet (Dairy, soy, nut, and gluten free)

Pour 2 cups of SoL™ Vanilla into a saucepan. Add one egg white, ¼ cup white sugar, 2 TBS of agave syrup and 1 ½ tsp of lemon juice. Whisk mixture over low heat until sugar is dissolved. Let it sit for one minute. Transfer to a canister of a frozen dessert maker. In a blender or food processor puree 2 cups strawberries until smooth. Add to canister. Follow directions for frozen dessert maker to achieve desired consistency. Transfer to a covered container and freeze until firm, at least one hour.

Chocolate Souffle (Soy, dairy, and nut free)

Preheat oven to 350 degrees. Spray the side of a 2 qt soufflé dish with cooking spray or grease with dairy free margarine. Sprinkle the sides with a little sugar. In saucepan melt 2 TBS dairy free margarine. Stir in 3 TBS of flour. Add ¾ cup SoL™ Vanilla and stir until thickened. Add ½ cup dairy free semi sweet baking chips until melted. Remove from heat and add chocolate mixture into four beaten egg yolks. Set aside. Beat 4 egg whites and ½ tsp vanilla until soft peaks form. Gradually add ¼ cup sugar, beating until stiff peaks form. Fold 1 cup of the egg white mix into the chocolate mix. Then fold chocolate mix into the remaining beaten whites. Transfer to greased dish. Bake for 35-40 minutes and serve immediately.

Minty Chip Frappé (dairy, nut, and egg free)

Combine in blender ½ cup SoL™ Vanilla, 1 scoop or ¼ cup of mint chocolate chip nondairy frozen dessert, 2 TBS of dairy free chocolate syrup, ¼ cup dairy free semi sweet mini chocolate chip, and ¼ cup of cold brewed coffee, and 4 – 6 ice cubes. Blend until smooth and frothy.
